We spent the afternoon being schooled in the flavours and origins of each drink. There were tales of experiments, of German brews with 47 extras, and other stories that added romance to the ritual.
This was not some stuffy, academic experience but one high on entertainment and stripped of any pretension. The staff here are experts and embrace a philosophy of 'no request is too large, no detail too small'.
It's accurate to say that after the third lap round the menu, our tasting notes got sketchier so we began to look closer at the hotel itself.
It sits on Charles Street, which dates back to the English Civil War, and comprises several former townhouses, merged to make the current premises.
It now houses 94 guest rooms and 13 suites with 24-hour room service, high-speed wi-fi, fine fabrics and great décor.
There's an apiary too, providing all the hotel's honey, and making its bees among some of the world's most elegant travellers.
